This coffee comes from smallholder farmers who are members of Lima Coffees in Cajamarca, Peru. Lima Coffees president Rony Lavan is a quality-driven cupper who has spent years trying to carve out better and bolder coffees from small coffee producers in Peru. He has been an impetus in shifting the focus among coffee growers in the region towards quality. Once focused on bigger lots and certifications, Peru is now emerging on the scene of specialty coffee as farmers realize that focusing on quality produces higher returns and a much more sustainable way of life. This coffee is a lovely example of a fine Peru with tasting notes of cherry soda, milk chocolate, pink lady apple, and rosewater. It is balanced, crisp, and slick.
