Coffee Story

This special coffee comes from 650 smallholder farmers in the Kebele Village of Edido in Yirgacheffe, Ethiopia. Farmers deliver ripe coffee cherries to the Edido washing station where only the highest quality cherries are processed. Coffee is dried on raised drying beds and covered from 12 pm to 3 pm to protect it from the hot sun and also at night to protect it from rainfall and ambient moisture. The indigenous heirloom varietals of Yirgacheffe are known for their lovely floral, citrus, and fruit notes. This coffee is no exception.

Blind Assessment: Richly sweet-tart, high-toned. Cacao nib, pie cherry, lilac, cedar, nougat in aroma and cup. Sweet-tart structure with juicy, vibrant acidity; crisp, velvety mouthfeel. The resonant finish centers around notes of tart stonefruit and cacao nib.

The Bottom Line: A coffee for those who like their washed Ethiopias high-toned and tart-leaning, with an abiding cocoa- and floral-toned sweetness throughout.
