This special coffee comes from 650 smallholder farmers in the Kebele Village of Edido in Yirgacheffe, Ethiopia. Farmers deliver ripe coffee cherries to the Edido washing station where only the highest quality cherries are processed. Coffee is dried on raised drying beds and covered from 12 pm to 3 pm to protect it from the hot sun and also at night to protect it from rainfall and ambient moisture. The indigenous heirloom varietals of Yirgacheffee are known for their lovely floral, citrus, and fruit notes. This coffee is no exception.

Blind Assessment: Evaluated as espresso. Bright, sweetly tart, floral- and nut-toned. Nougat, cherry, wisteria, almond wood, sweet lime in aroma and small cup. Nicely syrupy, crisp mouthfeel. The finish simplifies around an attractively tart and nutty resonance. The florals, tart elegance and rich-toned nuttiness carry with grace and delicacy into three parts milk.

The Bottom Line: A lovely espresso whose tartness is integrated with a deep and embracing sweetness.
