Coffee Story

This special coffee hails from the Kayon Mountain Coffee Farm in the Guji zone of Ethiopia's Oromia region. Established in 2012, Kayon Mountain is owned by Ato Esmael and his family. Their goal is to produce high quality coffee in a socially and environmentally responsible manner. Situated on a 240 Hectare plot, this certified organic farm boasts fertile sandy clay loam soil beneath a canopy of natural forest. The natural process at Kayon Mountain involves meticulous cherry selection and hand sorting prior to drying. Coffee is then dried on raised beds for 14-28 hours as workers regularly turn it to ensure optimum drying.

About the Guji Region: Historically exported as a Sidamo type, the Ethiopian government was lobbied for many years to grant Guji its own geographical distinction and this request was finally granted in recent years. While cup profiles from Guji tend to be similar to Sidamo coffees, there are those that feel there is something a little extra special in the terrior of Guji that enhances the cup.

What is Natural Process Coffee? The majority of the coffee we drink is washed processed. Natural process, conversely, refers to a coffee processing technique where the coffee is laid out to dry with the coffee cherry intact (rather than removing the cherry skin and mucilage before drying as in a washed/wet processed coffee). This creates a natural fermentation environment for the coffee and can produce high-end fruit notes or, if done wrong, over-ferment notes. We believe our Kayon Mountain Ethiopia Natural displays the intensely fruity aroma and flavor notes that can achieved when a natural process is done right.
